  1. 1 pound bulk pork sausage

  2. 1/2 cup chopped onion

  3. 1-1/2 cups (6 ounces) shredded cheddar cheese, divided

  4. 1 package (10 ounces) frozen chopped spinach, thawed and well drained

  5. 1 jar (4-1/2 ounces) sliced mushrooms, drained

  6. 12 eggs

  7. 2 cups heavy whipping cream

  8. 1/4 teaspoon ground nutmeg

  1. Hearty Egg Casserole Recipe photo by Taste of Home In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Remove from the heat; stir in 1 cup cheese, spinach and mushrooms. Transfer to a greased 13-in. x 9-in. baking dish.

  2. In a bowl, beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture. Bake, uncovered, at 350° or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand for 5 minutes before cutting. Yield: 12 servings.
