  1. 1/2 lb. green beans*

  2. 1 Tbsp. olive oil

  3. 1 oz. pancetta; cut into 1/4-inch cubes

  4. or 1 oz. ham

  5. 2 lg. garlic cloves; sliced very thin

  6. 3 anchovy filets; rinsed and finely chopped

  1. Bring a medium-sized pot of well-salted water to a boil.

  2. Cook beans for 5 minutes, then drain and rinse with cold water to set the color and stop the cooking.

  3. Heat olive oil in a skillet over low heat and add remaining ingredients.

  4. Simmer gently in oil, stirring occasionally, until garlic is golden.

  5. Increase heat to medium-high, add beans, and sautee, stirring frequently, for three minutes until beans are warmed through.

  6. *Note: Any green beans will work, but I really like the Italian broad beans.
