  1. 1/4 c sifted cake flour

  2. 2 tb sugar

  3. 1 tb cornstarch

  4. 1 ds salt

  5. 2 tb cooking oil

  6. 1 egg - separated

  7. 1 tb water

  1. Stir flour, sugar, cornstarch and salt together. Add cooking oil and egg white; stir until mixture is smooth. Add water; mix thoroughly.

  2. Make one cookie at a time. On lightly greased skillet or griddle, pour 1 tablespoon of batter; spread to 3 1/2″ circle. Cook over low heat until lightly browned, about 4 minutes. Turn with spatula; cook 1 minute more. Working quickly, place cookie on pot holder; put fortune in center. Fold in half, then fold again over edge of bowl.

  3. Place cookies in muffin tin to cool. Makes 8.
