  1. 250 gms mutton (pieces)

  2. 3 onions (chopped)

  3. 1 bay leaf

  4. 1 piece cinnamon (stick)

  5. 3 cloves

  6. 1 cardamom (black)

  7. 2tbsp oil

  8. 1/2tbsp ginger paste

  9. 1/2tbsp garlic paste

  10. Salt as per taste

  11. Water

  12. cup yogurt

  13. 2tsp coriander powder

  14. 1tsp red chili powder (kashmiri)

  15. 1tsp cumin powder

  16. 1/2tsp fennel seeds

  17. 1/2tsp black pepper powder

  18. 1/2tsp garam masala powder

  1. Heating up 2tbsp of oil in a pressure cooker

  2. Put bay leaf, cinnamon stick, black cardamom and cloves into the hot oil

  3. Fry them for one minute

  4. Now add the chopped onions and fry in a low flame till it turns golden brown in color

  5. When the onions are done add the ginger and garlic paste

  6. Fry for a minute until the raw smell goes

  7. Now add the mutton pieces and fry till it changes color

  8. Add salt as per taste

  9. When the color is changed adds water and mix well

  10. Now close the cover of the pressure and cook the mutton till 4-5 whistles

  11. Add the yogurt and mix well

  12. Now add coriander powder, cumin powder, red chili powder, garam masala, fennel seeds and black pepper with the mutton gravy

  13. Mix them well with the gravy

  14. Cook it for another 5 minutes

  15. Mutton Rogan Josh is ready to be served

  16. Try it with rice, roti, naan or parantha
