  1. 3tbsp oil

  2. 1 chopped onions

  3. 1 inch ginger

  4. 3-4 cloves garlic

  5. 1 green chili

  6. cup chopped potatoes

  7. cup chopped cauliflower

  8. cup chopped green pepper

  9. cup of green peas

  10. cup chopped cilantro

  11. 3-4 chopped carrots

  12. 2tbsp tomato paste

  13. Spices:

  14. 2tsp salt

  15. 1/2tsp red chili powder

  16. 1tsp cumin seeds

  17. tsp red chili powder

  18. 1/2tsp turmeric powder

  19. 1/2tsp coriander powder

  20. 1/2tsp fenugreek leaves

  21. 1/2tsp garam masala

  22. Pinch of asafetida powder

  1. Pour 3tbsp oil in a wok and make hot

  2. Add pinch of asafetida powder, 1tsp cumin seeds, 1 chopped onion, ginger, garlic and chopped green chilies in hot oil

  3. Add spices like 2tsp salt, 1/2tsp red chili powder, 1tsp turmeric powder

  4. When onions are changing color add ½ cup of chopped potatoes, ½ cup of chopped cauliflower, chopped carrots

  5. Mix altogether well and cover them to cook for 5-6 minutes

  6. Stir them time to time

  7. When the vegetables are done 50% add ½ cup of chopped green pepper, ½ cup of green peas, 2tbsp tomato paste, 1/2tsp of coriander powder and 1/2tsp of fenugreek leaves

  8. Cover it again and let them cook for 5-6 minutes more until the curry is fully cooked

  9. Mix vegetable masala is ready

  10. Now sprinkle 1/2tsp of garam masal and mix vegetable masala is ready to serve
