  1. 1/3 cup cider vinegar

  2. 1/3 cup salad oil

  3. 1/4 cup finely chopped shallots

  4. 3 Tbsp. sugar

  5. 1 Tbsp. water

  6. 2 cloves garlic, minced

  7. 1 tsp. snipped fresh rosemary

  8. 1 tsp. finely shredded lemon peel

  9. 2 Tbsp. lemon juice

  10. 1 tsp. each salt and ground black pepper

  11. 1 16-oz. pkg. shredded cabbage with carrot (coleslaw mix)

  12. 2 cups small broccoli florets

  13. 1 green sweet pepper, chopped

  14. 1 large tomato, chopped

  15. 1/4 cup each snipped fresh cilantro and basil

  1. In large screw-top jar combine vinegar, oil, shallots, sugar, water, garlic, rosemary, lemon peel, lemon juice, salt, and pepper. Cover jar;shake until sugar is dissolved. In very large bowl toss together coleslaw mix, broccoli, sweet pepper, tomato, cilantro, and basil. Shake dressing; add to vegetable mixture. Toss to coat. Serve immediately or cover and chill up to 4 hours. Stir before serving.
